Incorporer le sucre glace et le sucre vanill\u00e9.<br \/>Incorporer les jaunes en battant \u00e0 l\u2019aide d\u2019un fouet.<br \/>Incorporer la farine du bout des doigts. Fraiser.<br \/>Couvrir d\u2019un papier film et laisser reposer 20 minutes au frais. Abaisser et d\u00e9tailler en disques de 3 cm de diam\u00e8tre.<br \/>Enfourner \u00e0 180\u00b0C environ 20 min jusqu\u2019\u00e0 ce que les sabl\u00e9s soient bien dor\u00e9s. Laisser refroidir.<br \/><strong>Pr\u00e9parer la garniture\u2002:<\/strong><br \/>Cuire dans un po\u00ealon le sucre et l\u2019eau lentement en remuant avec une \u00e9cumoire.<br \/>Porter \u00e0 \u00e9bullition, \u00e9cumer, ne plus remuer.<br \/>Le sucre doit former une boule entre les doigts.<br \/>Incorporer le chocolat fondu au bain-marie.<br \/>Garnir les sabl\u00e9s \u00e0 la poche avec la meringue et le sirop de chocolat.
