Coupez-les en tron\u00e7ons pour ne conserver que les c\u00f4tes. Mettez-les \u00e0 cuire \u00abau blanc-bouillon\u00bb, c\u2019est-\u00e0-dire dans une grande casserole d\u2019eau avec de la farine et du jus de citron (pour \u00e9viter que le cardon noircisse) et portez \u00e0 \u00e9bullition pendant 20 min.<br \/>Dans le bas du couscoussier, r\u00e2pez les oignons, ajoutez les \u00e9pices, l\u2019huile d\u2019olive ainsi que la viande.\u00a0<br \/>Laissez mijoter pendant 5 minutes puis couvrez d\u2019eau. Ajoutez ensuite la tomate, les pois chiches et couvrez \u00e0 nouveau d&rsquo;eau.
