Les envelopper d\u2019un film alimentaire et les laisser refroidir pendant 15 min. Peler les aubergines et les \u00e9p\u00e9piner. Hacher finement la chair d&rsquo;aubergines et dess\u00e9cher sur le feu. Dans un bol, travailler la chair d&rsquo;aubergines avec le poulet hach\u00e9, les \u00e9pices, la coriandre, l&rsquo;ail, pour avoir un m\u00e9lange homog\u00e8ne. Confectionner des boulettes de taille moyenne. Passer les boulettes dans la farine puis dans l&rsquo;\u0153uf et enfin dans chapelure.
