Mettre le hachis dans une cocotte l\u00e9g\u00e8rement huil\u00e9e, faire revenir la viande 10 minutes \u00e0 feu vif jusqu\u2019\u00e0 \u00e9vaporation du liquide. En cours de cuisson, d\u00e9faire \u00e0 la fourchette les morceaux coll\u00e9s. Verser la sauce tomate, le persil, la menthe et l\u2019ail. Porter \u00e0 \u00e9bullition, baisser le feu et laisser fr\u00e9mir \u00e0 d\u00e9couvert pendant 30 min. Retirer du feu, saler, poivrer.\u00a0<br \/>Faire cuire les p\u00e2tes dans l\u2019eau bouillante al dente. Passer sous l\u2019eau froide, \u00e9goutter. Dans un saladier, m\u00e9langer spaghettis et blancs d\u2019\u0153ufs.\u00a0<br \/>Sauce au fromage : A feu doux, laisser fondre le beurre dans une casserole, verser la farine. Tourner 4 minutes pour obtenir un roux blond. Progressivement, verser le lait, remuer jusqu\u2019\u00e0 liaison de la sauce, 5 minutes environ.\u00a0<br \/>Lorsqu\u2019elle bout et s\u2019\u00e9paissit, faire r\u00e9duire 1 minute, retirer du feu, laisser refroidir. M\u00e9langer dans la b\u00e9chamel les jaunes d\u2019\u0153ufs et le r\u00e2p\u00e9. On parfume la sauce au fromage avec une pinc\u00e9e de muscade. Dans un plat \u00e0 gratin huil\u00e9,\u00a0<br \/>\u00e9taler la moiti\u00e9 des p\u00e2tes, recouvrir de hachis. \u00c9taler une deuxi\u00e8me couche de p\u00e2tes, napper de sauce au fromage, parsemer de chapelure.
