Garniture : 250 g de petites fraises \u00e9queut\u00e9es, 100 g de sucre, 1 c. \u00e0 s. de f\u00e9cule de ma\u00efs, 1 c. \u00e0 s. de confiture de fraises, 1,5 dl d&rsquo;eau, 1 c. \u00e0 s. de jus de citron, 1 c. \u00e0 s. de gel\u00e9e de fraises<\/strong><\/em><\/p>\n<p>Pour pr\u00e9parer le fond de tarte, m\u00e9langer la farine avec le sel et ajouter le beurre, bien travailler au fouet jusqu&rsquo;\u00e0 obtention d&rsquo;une p\u00e2te homog\u00e8ne. Incorporer l&rsquo;eau froide et m\u00e9langer pour obtenir une p\u00e2te ferme. Abaisser la p\u00e2te sur un plan de travail farin\u00e9. Tapisser un plat \u00e0 tarte de papier sulfuris\u00e9, remplissez-le avec la p\u00e2te, enfourner et faire cuire 20 min environ jusqu&rsquo;\u00e0 ce que la cro\u00fbte soit dor\u00e9e. Laisser refroidir. M\u00e9langer dans une casserole le sucre avec le f\u00e9cule de ma\u00efs, la confiture de fraises, l&rsquo;eau et le jus de citron, porter \u00e0 \u00e9bullition et faire cuire 2 min environ en remuant. Laisser refroidir. Napper le fond de la cro\u00fbte avec la moiti\u00e9 de cette pr\u00e9paration, disposer les fraises dessus, mettre le reste de la pr\u00e9paration, r\u00e9server au r\u00e9frig\u00e9rateur.
