R\u00e9server les barquettes d&rsquo;aubergines.<br \/>Eplucher les pommes de terre, les d\u00e9couper en d\u00e9s et les faire frire dans un bain d&rsquo;huile br\u00fblant. Egoutter sur du papier absorbant.<br \/>Faire frire les aubergines et les \u00e9goutter sur du papier absorbant.<br \/>Mettre dans un r\u00e9cipient les d\u00e9s d&rsquo;aubergines, les pommes de terre, le sel, le poivre, la noix de muscade r\u00e2p\u00e9e, le fromage r\u00e2p\u00e9 et les \u0153ufs battus puis m\u00e9langer le tout.<br \/>Saupoudrer de sel les barquettes d&rsquo;aubergines et les farcir avec le m\u00e9lange.\u00a0<br \/>Les disposer dans un moule \u00e0 gratin et verser de l&rsquo;eau \u00e0 mi-hauteur des barquettes.<br \/>Saler et ajouter la tranche de citron et l&rsquo;huile.
