Veiller \u00e0 ce que le fond d&rsquo;eau reste pendant la cuisson, puis les peler. Faire suer \u00e0 l&rsquo;huile d&rsquo;olive les oignons, les tomates, l&rsquo;ail et les aubergines coup\u00e9es grossi\u00e8rement. Continuer la cuisson \u00e0 couvert jusqu\u2019\u00e0 \u00e9vaporation des liquides, puis laisser r\u00e9duire pour obtenir une pur\u00e9e. Mixer, refroidir et assaisonner de fa\u00e7on relev\u00e9e.<br \/>Cr\u00e8me de fromage :<br \/>Ecraser le fromage de ch\u00e8vre et m\u00e9langer avec la cr\u00e8me liquide.
