La cr\u00e8me ainsi obtenue est ensuite pasteuris\u00e9e \u00e0 moins de 100\u00b0C pendant 30 secondes afin d\u2019assurer la destruction des germes et l\u2019inactivation des enzymes.\u00a0<br \/>Apr\u00e8s pasteurisation, la cr\u00e8me est ou non ensemenc\u00e9e par des bact\u00e9ries lactiques.<br \/>Une cr\u00e8me \u00e9paisse a subi cet ensemencement, ce qui permet d\u2019agir sur sa texture, son \u00e9paisseur, son acidit\u00e9 et m\u00eame son go\u00fbt. Si la cr\u00e8me n\u2019est pas ensemenc\u00e9e, elle reste tout simplement liquide.
