Battre au fouet les jaunes d\u2019\u0153ufs avec le sucre et la vanille jusqu\u2019\u00e0 ce que la pr\u00e9paration soit p\u00e2le et mousseuse. Ajouter le lait, la cr\u00e8me et la vanille en fouettant vivement. Passer la pr\u00e9paration au chinois. Verser dans 8 ramequins allant au four. Laisser reposer une quinzaine de minutes (jusqu\u2019\u00e0 ce que les bulles disparaissent). Cuire 30 mn au four. Laisser bien refroidir et mettre 1 h au r\u00e9frig\u00e9rateur. Juste avant de servir, saupoudrer g\u00e9n\u00e9reusement de sucre et pr\u00e9chauffer le gril du four. Lorsqu&rsquo;il est bien rouge, d\u00e9poser les ramequins sur une grille au plus proche du gril et laisser caram\u00e9liser en surveillant. La cr\u00e8me doit \u00eatre servie froide en dessous et chaude et croustillante en surface.<br \/>Astuce : La cr\u00e8me br\u00fbl\u00e9e peut se pr\u00e9parer 3 ou 4 jours \u00e0 l\u2019avance.
