P\u00e9trir jusqu\u2019\u00e0 obtenir une p\u00e2te moelleuse.<br \/>Laver les merlans, les vider et leur enlever les ou\u00efes et les nageoires. Les enrober de farine puis les tremper dans la p\u00e2te. Faire frire 2 \u00e0 3 minutes dans un bain d&rsquo;huile chaude jusqu&rsquo;\u00e0 obtention d&rsquo;une coloration dor\u00e9e, puis \u00e9goutter sur du papier absorbant. Nettoyer les calamars, les d\u00e9couper en rondelles et les saler. R\u00e9server la t\u00eate et les tentacules pour d\u2019autres pr\u00e9parations (paella&#8230;). Les enrober de farine et les tremper dans la p\u00e2te. Faire frire dans un bain d&rsquo;huile pendant 3 minutes. Disposer sur du papier absorbant.\u00a0<br \/>D\u00e9cortiquer les crevettes et pr\u00e9server la queue. Saler et enrober de farine puis tremper dans la p\u00e2te. Faire frire pendant 2 minutes et \u00e9goutter sur du papier absorbant.
